Nice post- it's interesting to read what everyone likes. 
As for myself, I like basically everything that is not modern pop, not a
consumer product music, not too sweet and kitsch. Especially I like music
that has strong emotion in it but manages to convey it in a fresh way
(for me). I like music that challenges me, but is not all brain music. I
really like psychedelic music of all sorts. 
I started around the age of 10 when me and a friend started to tape music
from a radio to a cassette- we had a separate radio and a separate
tape-recorder, so we had to be real quiet when we recorded :-)  I
really got fed up with the horrible quality of the recording (and
occasional sound of door closing), so I went to buy a record- There was
one song we really liked on the radio(!)- Iron Maiden- The Trooper- when
I saw in the record store the Iron Maiden cover with Eddie the monster,
there was no question what I'm gonna buy. So I go hooked on Heavy Metal.
Than I moved to Punk, Industrial & New Wave, and got introduced to
electronic music through Front 242 and the rest of them. A friend in San
Francisco was sending me music from the US and got me into Punk Rock and
other oddities. Than there was a flip back to Psychedelic Rock (Black
Sabbath, Deep Purple, Led Zeppelin, King Crimson etc.), than to search
the 60’s and The Blues. Pink Floyd & others showed me another side of
psychedelic and electronic music (Rober Wyatt!), I did a side trip to
Reggae land, and finally landed in Tranceland. Listening (and dancing) to
Techno and Psychedelic and Goa Trance really changed the way I listened
to music and got me to start writing about music and DJing, and finally
to be involved in the other side of things, running my own label. It also
got me to expand my horizons on electronic music in general, and when I
finally chilled out a little into downtempo music of all sorts and
ambient. I travelled a lot around the world, and brought a lot of music
with me- I have music from almost everywhere in the world- listening to
it is like travelling- something I really like doing. Indian music
(classical & modern) is a big favorite (like India itself), and so is
Andalous & North African music (North African Jewish music in
particular), as is Ethiopian & Sudanese music, Arab, Yemenite &
Middle Eastern music. There's also a lot of local Israeli music I listen
too. Last few years I've been venturing into Jazz, mainly Miles Davis (On
the Corner!), Roland Kirk, John Coltrane and bluesy Jazz. 
I still listen to all this. To what exactly really depends on my mood. I
of course listen a lot to downtempo electronic music, as this is what I
DJ mainly and release on my label. To ambient as most people on this list
will probably define it I don't listen that much. I discovered this list
long time ago, and found it interesting and with interesting people and
so stayed here and lurked mostly. When someone recommends something that
sounds interesting to me, I buy it :-)
And yes, I listen to music A LOT :-D
